1. ���Add oil, shallot, garlic, ginger + chilli to a saucepan. Cook on medium heat for 3-5 mins. 2. ���Add the soy, rice vinegar, curry paste. Cook for another 2-3 mins. 3. ���Add in vegetable stock. 4. ���Bring to a boil, then allow to simmer for 15-20 mins. Strain the broth. 5. Add in coconut milk, mushrooms and tofu. 6. ���Cook for 5-10 mins. 7. ���Add in green onions, parsley, sugar and lime juice. 8. Serve. Garnish with red chilli, parsley, lime wedges and an extra tbsp of chilli oil if you like it spicy!
