What you need

parsley

cup green onion

cup tofu

cup shiitake mushrooms
lime
tsp light-brown sugar

can lite coconut milk

cup vegetable stock

tbsp thai red curry paste

tbsp rice wine vinegar

tbsp light soy sauce
tbsp chili pepper

ginger

clove garlic

shallot
Instructions
1. ���Add oil, shallot, garlic, ginger + chilli to a saucepan. Cook on medium heat for 3-5 mins. 2. ���Add the soy, rice vinegar, curry paste. Cook for another 2-3 mins. 3. ���Add in vegetable stock. 4. ���Bring to a boil, then allow to simmer for 15-20 mins. Strain the broth. 5. Add in coconut milk, mushrooms and tofu. 6. ���Cook for 5-10 mins. 7. ���Add in green onions, parsley, sugar and lime juice. 8. Serve. Garnish with red chilli, parsley, lime wedges and an extra tbsp of chilli oil if you like it spicy!View original recipe
