This gluten free turkey and eggplant sandwich is an easy, healthy lunch idea that can be made as a low fat recipe or as a dairy free recipe. For the dairy free recipe use dairy free cheese. For the low fat recipe use fat free cheese, lite mayo.

baby arugula

shredded mozzarella

Instructions
