Vodka and Pesto Pasta Bake

I love an easy, healthy weeknight meal… especially an easy pasta dish. This pasta is topped with vodka sauce, pesto and eggplant, smothered in cheese and baked until the edges are crispy.

What you need

eggplant

pizza sauce

cup fresh mozzarella

cup quinoa pasta
Instructions
1. Cook the pasta according to box directions. 2. One finished, drain and add pasta to a baking dish. 3. Slice the skin off the eggplant. Cut into 1/2” cubes. Toss with olive oil and bake on 350 for 10 minutes. 4. Once done, add eggplant to the baking dish with pasta. 5. Top with vodka sauce and pesto. 6. Bake on 350, covered, for 60 minutes. 7. Add mozzarella during the last 10 minutes of baking.View original recipe
